Scientists at the European Society of Cardiology identified two key ingredients, during a study: Dark chocolate and high quality extra virgin olive oil—as having a powerful effect on the heart health of volunteer subjects, suffering from some form of cardiovascular risk, such as smoking, hypertension, or family history.

This combination was proven to be also behind a significant increase in good cholesterol and decrease in blood pressure.

“Our study suggests that extra virgin olive oil might be a good food additive to help preserve our 'repairing cells', the EPC.” (Dr. DiStefano) .

Many recipes could potentially offer us this combination. We picked today a popular dessert liked by everyone: Chocolate Mousse with Darmmess.


  • 170gr high quality bittersweet chocolate (chopped)

  • 2 tablespoons Cognac

  • 2 tablespoons strong espresso

  • 4 large eggs, separated

  • 1/2 cup Darmmess EVOO

  • 2 tablespoons sugar

  • Pinch of sea salt


1. Melt the chocolate, liquor, and coffee together in the top of a double boiler. Then add the pinch of salt and remove from the heat.

2.. Stir the egg yolks in one at a time then add Darmmess using a wooden spoon.

3. Start whipping the egg whites and when they begin to stiffen add the sugar. Whip to stiff peaks.

4. Fold the beaten egg whites into the chocolate a quarter at a time, thoroughly amalgamating in between additions until all the whites have been folded in.

5. Spoon the mixture into 6 individual ramekins
